Agar Agar is low calories, fat free and does not have a large amount of protein and carbohydrates. It is widely used in Asian cuisine and popular with vegan chefs. Agar Agar has no calories, no carbs, no sugar, no fat and is loaded with fiber. It’s free from starch, soy, corn, gluten, yeast, wheat, milk, egg and preservatives. The gelling agent in agar agar is an unbranched polysaccharide which reacts to heat. It is used as a clarifying agent in brewing, as a laxative becuase its 80 percent of fiber, as an appetite suppressant. The most common usage is as a vegetarian gelatin substitute, a thickener for soups, in fruits preserves, ice cream and others desserts, but Agar Agar is much more powerful than gelatin (1 teaspoon agar agar powder is equivalent to 6-7 teaspoon gelatin powder). Agar Agar can set at room temperature and effectively keeps its shape in warmer weather. Gelatin, on the other hand, needs refrigerating to set and will melt in warm temperatures. Powered Agar Agar is more straightforward to dissolve than gelatin. Its versatility often makes it more popular than gelatin with chefs.

How to Use: agar agar can be substituted for gelatin. It can be used to make desserts, puddings, yogurt, jelly, panna cotta, ice cream, jam and to thicken soups and stews. Agar agar can be made into gel by adding 1.5 grams of powder to 1 liter of cold water. Bring to boil, simmer for 1 minute and then pour the mixture into molds. Let cool and then refrigerate until set. Add 200-250gr of sugar for a better taste. It is important to consume Agar Agar with plenty of liquid.
